Crispy pork roast

Ingredients for 4 servings:

  • 1 kg roast pork, with rind, without bones
  • some water
  • Salt
  • pepper
  • Caraway powder
  • Marjoram, shredded
  • 1 bunch soup greens, cleaned and chopped
  • 1 onion(s), diced
  • ⅛ liter meat broth

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 45 minutes

with divine crust!

Pre-cook the pork, rind-side down, in a little water for 45 minutes, so that only the rind is in the water. Score the rind in a diamond shape, taking care not to damage the meat. Rub the spices into the pork and place it with the vegetables and onion, rind-side up, in a shallow ovenproof dish. Pour the meat broth over the pork and place it in the oven at 160°C (top/bottom heat). Roast for 1.5 hours. Cut the roast into finger-thick slices and serve with sauerkraut and mashed potatoes.
