Crispy potato wedges

Ingredients for 2 servings:

  • 10 m.-large potatoes, waxy
  • 1 packet of baking powder
  • 3 tbsp olive oil
  • 2 tbsp cornstarch
  • 3 tbsp panko
  • salt and pepper
  • Paprika powder
  • Seasoning salt (chip salt)

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 20 minutes

Peel the potatoes, cut them into wedges, and place them in a bowl with boiling water. Add the salt and baking powder, mix, let stand for 10 minutes, and then dry thoroughly. In a bowl, combine the potatoes with the olive oil, starch, panko, and seasonings. Mix thoroughly and place on a baking sheet. Bake in a preheated oven at 210°C (top/bottom heat) for 20 minutes. Open the door to allow steam to escape. Then bake for another 15-20 minutes, until crispy.
