Ingredients for 3 servings:

  • 1 kg potatoes, mainly waxy
  • 50 g potato flour
  • Salt
  • oil

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 55 minutes

Cook the potatoes in their skins in a pressure cooker until very soft, then peel them while still hot. Mash the potatoes and add the potato flour and salt. Stir with a rubber spatula until smooth; do not knead! Form the dough into thumb-thick rolls and cut into pieces. Heat oil in a pan and briefly fry the croquettes.
