Crostini with goat's cheese, grapes and bacon

Ingredients for 20 servings:

  • 20 slices of ciabatta or baguette, toasted
  • 5 slices of bacon
  • 500 g blue, seedless grapes
  • 1 tsp, heaped thyme leaves, fresh
  • some olive oil
  • salt and pepper
  • 250 g goat’s cheese
  • Thyme leaves

Instructions

Working time approx. 20 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Preheat the oven to 225 degrees C. Wash the grapes, dry them thoroughly, and remove the stems. Line a baking sheet with parchment paper, arrange the grapes on it, toss with the thyme and oil, and bake for 20 minutes, turning once. Remove from the oven, season with salt and pepper, and let cool. Cut the bacon slices into four pieces and fry in a pan without fat until crispy, then drain on kitchen paper. Spread the bread with goat’s cheese and top each slice with some of the grapes, a piece of bacon, and a few thyme leaves.
