Crumble Cake with Plums

The perfect crumble cake with plums recipe with a picture and simple step-by-step instructions.

For the ground

  • 200 g Flour
  • 100 g Sugar
  • 100 g Soft butter
  • 100 g Lemon zest
  • 1 Egg

For the sprinkles

  • 200 g Soft butter
  • 200 g Flour
  • 100 g Sugar
  • 50 g Ground almonds
  • 1 pinch Salt
  • 1 tsp Cinnamon

For the filling

  • 1 kg Plums
  • 150 g Sugar
  • 1 tsp Cinnamon
  • 1 pinch Ground star anise
  1. For the base, knead all ingredients into a smooth dough and place in the refrigerator for half an hour.
  2. For the crumble, knead all the ingredients into a crumbly dough.
  3. For the filling, wash, core and quarter the plums. Caramelize with sugar, cinnamon and star anise for about 15 minutes.
  4. Roll out the cooled dough in a greased springform pan sprinkled with breadcrumbs, push the edge up a little and prick several times with a fork.
  5. Spread the caramelized plums on the batter and sprinkle with the crumble.
  6. Bake at 175 ° C for 50-60 minutes on the middle rack until golden brown.
