as a base for desserts, ice cream, cakes, waffles, etc.
This jelly won’t set as hard because no gelling agent is used. Wash and dry the lemons. Using a fine zester, grate the zest from all the lemons, leaving only the yellow part. Then squeeze the lemons. I used 1030 grams of lemon juice. In a glass bowl, thoroughly combine the grated zest, lemon juice, and sugar, stirring occasionally until the sugar dissolves. This takes about 20 minutes. Pour the mixture into a large saucepan, bring to a boil, simmer gently for about 3 minutes, and then pour into small jars while still hot.
