Ingredients for 3 servings:

  • 130 g Greek yogurt
  • 40 ml carbonated mineral water
  • 2 eggs, size M
  • 1 tbsp extra virgin olive oil
  • 15 g coconut blossom syrup
  • 15 g oat bran
  • 40 g wheat flour type 405
  • 1 pinch of salt
  • 2 pinches of baking powder
  • 200 g dark grapes, seedless
  • 1 tbsp xylitol (powdered sugar substitute)
  • 2 tsp pomegranate seeds, fresh from the fruit
  • Margarine and breadcrumbs for the Omnia oven

Instructions

Working time approx. 5 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

for the Omnia oven

Combine all ingredients except the grapes in a tall bowl and whisk well. Let rest for 15 minutes. Grease the Omnia oven thoroughly with margarine and sprinkle with breadcrumbs. Pour the batter into the pan and carefully arrange the grapes inside. They will sink, which is normal. Bake on the gas stove at 1/3 full heat for about 30-35 minutes. Remove the Omnia from the gas stove and garnish the cake with powdered sugar and pomegranate seeds. It tastes best hot from the oven. It can also be baked in a different pan, in the normal oven. Bake at about 140 degrees Celsius for about 40 minutes.
