crumbly veggie aioli

Spread the love

Ingredients for 1 servings:

  • 1 tbsp oat flakes (melted flakes)
  • 1 tsp mustard
  • some salt
  • 40 ml water
  • 3 cloves garlic
  • 1 pinch of turmeric
  • 3 pinches of guar gum
  • 1 pinch of chili powder
  • 50 ml extra virgin olive oil
  • 2 tbsp vinegar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

without soy milk

Peel the garlic, chop it up a bit, and place it in a food processor. I don’t have a stand mixer yet, which I could obviously use instead. Now add the garlic flakes, water, mustard, salt, turmeric, and chili powder to the garlic. Chop these ingredients thoroughly in the food processor, then very slowly add the olive oil, a little at a time, and continue to run the processor. While doing this, add a pinch of guar gum and the 2 tablespoons of vinegar, a little at a time. I ran my food processor for about 8 minutes in total and got a wonderfully creamy, thick mixture.
