for the crispy crumbs
- 150 g Breadcrumbs
- 50 g Clarified butter
- 3 tablespoon Sugar brown
for the Busserl
- 2 Protein
- 1 pinch Salt
- 80 g Sugar
- 1 packet Vanilla sugar brown

- I love these crunchy caramelized crumbs especially – whenever I roll my apricot dumplings in them, I need more crumbs than dumplings (laughs) – that’s why I wanted to pack these delicious caramelized crumbs in biscuits! and I think it went well …
Crumbs
- slowly roast the crumbs in butter until light brown – add the brown sugar and let it caramelize – roast in the pan until the crumbs have a beautiful golden yellow color – let cool
Busserl
- Beat the egg whites with a pinch of salt until stiff – then add the sugar spoon by spoon and continue stirring until the snow is thick and compact and pulls in tips – add the cooled crumbles and carefully fold in with a whisk
- Pour the mixture into a piping bag and place small biscuits on a baking sheet lined with baking paper – in the preheated oven at 100 degrees for approx. 40 to 60 min. (Depends on the size of the biscuits) dry rather than bake – you are done if they can be easily removed from the parchment paper
