for the crispy crumbs

  • 150 g Breadcrumbs
  • 50 g Clarified butter
  • 3 tablespoon Sugar brown

for the Busserl

  • 2 Protein
  • 1 pinch Salt
  • 80 g Sugar
  • 1 packet Vanilla sugar brown

  1. Beat the egg whites with a pinch of salt until stiff – then add the sugar spoon by spoon and continue stirring until the snow is thick and compact and pulls in tips – add the cooled crumbles and carefully fold in with a whisk
  2. Pour the mixture into a piping bag and place small biscuits on a baking sheet lined with baking paper – in the preheated oven at 100 degrees for approx. 40 to 60 min. (Depends on the size of the biscuits) dry rather than bake – you are done if they can be easily removed from the parchment paper
