Cucumber and dill salad with cucumber and dill dressing

Ingredients for 2 servings:

  • 1 cucumber(s)
  • 1 bunch of dill
  • 1 small red pointed pepper
  • 2 tbsp vinegar, of your choice
  • 1 tsp maple syrup
  • 1 pinch of salt
  • 2 tbsp rapeseed oil
  • 1 pinch of herb pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the cucumber, trim the ends, and peel every other strip. Thinly slice the cucumber. Wash the dill, pat dry, and chop. Wash and trim the bell peppers, and finely slice them. For the dressing: Blend half of the dill, 1/4 of the cucumber slices, vinegar, maple syrup, salt, and canola oil in a blender until smooth. Place the cucumbers, bell peppers, and dill in a salad bowl and mix. Pour the dressing over the salad. Season to taste and serve with freshly ground pepper.
