Cucumber and Green Spelled Salad with Feta

Ingredients
 

  • 125 g Green kernels
  • 300 ml Vegetable broth
  • 1 Pc. Cucumber
  • 10 Pc. Olives
  • 2 tbsp Olive oil
  • 1 tbsp Apple Cider Vinegar
  • Salt pepper
  • 100 g Feta
  • 1 tbsp Chopped fresh dill or parsley

Instructions
 

  • Put the washed green spelled in a saucepan with boiling vegetable stock and cook for about 10 minutes, then turn the heat down and cook for another 20 minutes on a low heat.
  • Slice the cucumber into fine slices, cut the olives in half and fold both into the cooled grain. Mix the olive oil and vinegar with a little salt and pepper and stir in. Crumble the feta and spread it on the salad with the chopped herbs.

Tips:

  • The salad tastes lukewarm and cold. Instead of green spelled, you can also use millet, spelled or couscous etc. Note the different cooking times!
