Cucumber and Green Spelled Salad with Feta
The perfect cucumber and green spelled salad with feta recipe with a picture and simple step-by-step instructions.
- 125 g Green kernels
- 300 ml Vegetable broth
- 1 Pc. Cucumber
- 10 Pc. Olives
- 2 tbsp Olive oil
- 1 tbsp Apple Cider Vinegar
- Salt pepper
- 100 g Feta
- 1 tbsp Chopped fresh dill or parsley
- Put the washed green spelled in a saucepan with boiling vegetable stock and cook for about 10 minutes, then turn the heat down and cook for another 20 minutes on a low heat.
- Slice the cucumber into fine slices, cut the olives in half and fold both into the cooled grain. Mix the olive oil and vinegar with a little salt and pepper and stir in. Crumble the feta and spread it on the salad with the chopped herbs.
Tips:
- The salad tastes lukewarm and cold. Instead of green spelled, you can also use millet, spelled or couscous etc. Note the different cooking times!
