Cucumber as a vegetable

Ingredients for 5 servings:

  • 2 large cucumbers
  • 1 dl broth, strong
  • 1 cup sour cream, approx. 250 grams
  • 3 tsp, heaped dill, dried
  • some salt and pepper, white
  • 1 tbsp sugar
  • 2 tbsp lemon juice
  • possibly cornstarch

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 22 minutes

Peel the cucumber, halve it, and cut it into slices about 2 cm thick. Combine all the other ingredients in a pan and bring to a boil while stirring. Add the cucumbers and simmer gently over low to medium heat for 10 minutes. The sauce will be relatively thin, which is how I like it. Alternatively, you could add half a teaspoon of cornstarch to the cold sauce and then bring it to a boil to thicken it a bit.
