Ham, leek and cheese patties

Ingredients for 4 servings:

  • 150 g dumpling bread or small sliced ​​rolls/bread rolls, stale
  • some oil for frying
  • 120 g leek, finely chopped
  • 50 g bacon, finely chopped
  • 100 g cooked ham, finely chopped
  • 100 g cheese, seasoned, finely chopped or coarsely grated
  • 200 ml milk
  • 2 eggs
  • salt and pepper
  • some nutmeg powder
  • 2 tbsp parsley, chopped
  • some clarified butter for frying the patties

Instructions

Working time approx. 25 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 10 minutes

Fry the leeks and bacon in a pan with a little oil over low heat for about 5 minutes. Then let cool slightly. Place the dumpling bread in a bowl. Add the leeks, bacon, ham, and cheese. Whisk the milk with the eggs and season with salt, pepper, and a little nutmeg. Add the eggs to the bowl along with the chopped parsley and mix everything well. Let it sit for about half an hour. Then, using slightly moistened hands, form the mixture into eight patties. Heat the clarified butter in a pan and fry the patties over low heat until golden brown on both sides. Remove from the pan and drain briefly on kitchen paper. I like to serve this with a herb sauce and salad.
