Cucumber salad with buttermilk chive dressing

Ingredients for 2 servings:

  • 1 cucumber(s)
  • 80 ml buttermilk
  • 2 tbsp lemon juice
  • 1 tsp honey
  • ½ tsp salt
  • 1 pinch of freshly ground pepper
  • 1 bunch of chives

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash, peel, and slice the cucumber. Season with salt and let stand for about 15 minutes, then squeeze out a little of the cucumber juice and discard. For the dressing, combine buttermilk, lemon juice, honey, and pepper. Wash the chives and cut them into small pieces. Arrange the cucumber salad in a salad bowl, drizzle with the dressing, toss to combine, and sprinkle with the chives.
