Cucumber salad with spicy dressing

Ingredients for 2 servings:

  • 1 snake cucumber(s) or some fresh pickled cucumbers
  • 1 tbsp Ajvar, hot
  • 2 tbsp mayonnaise
  • 1 tbsp cream
  • 1 tsp Pul Biber
  • 1 tsp sugar, optional depending on the mayonnaise used
  • 1 pinch of lime zest
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Super easy and ready in 3 minutes – a wonderful cold meal on hot days

Mix all ingredients, except the cucumber, thoroughly. If you’re not using a blender, it’s a good idea to grind the Pul Biber in a mortar beforehand so the flakes aren’t too large. Thinly slice the cucumber while it’s still cold, toss with the dressing, and enjoy. Don’t let the salad stand for long, as the cucumber absorbs a lot of water, making the dressing too watery. This amount is calculated for a side dish. In the summer, we often make a whole cucumber per person and eat it as a main course. The salad tastes best fresh, but made with well-chilled ingredients.
