Cucumber salad with tomato and cream sauce

Ingredients for 2 servings:

  • 1 cucumber(s), peeled and cut into not too thin slices
  • 10 cherry tomatoes, each cut into three slices
  • 1 small onion(s), red, cut into fine cubes
  • 1 tbsp wine vinegar
  • salt and pepper
  • 2 tsp sugar
  • 2 tsp dill tips, dried
  • 3 tbsp olive oil
  • 50 ml Cremefine or sweet cream
  • 1 pinch of vegetable stock powder

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Place the cucumbers, tomatoes, and onions in a bowl. Whisk all the other ingredients, except the oil and cream, in a glass or mug. Slowly add the oil while stirring, stirring well. Stir in the cream to finish. Only pour the dressing over the salad just before serving. I arrange it in two small bowls and then pour the dressing, which is quite thick, over the salad. This way, it doesn’t dilute too much.
