Ingredients for 2 servings:

  • 2 cucumber(s) , (cucumbers)
  • 1 red chili pepper(s)
  • 200 ml cream
  • 1 tbsp tomato paste
  • 1 tbsp sweet mustard
  • 1 pinch(s) of curry
  • 1 tbsp butter
  • Salt and pepper, from the mill
  • Marjoram, fresh

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and dice the cucumbers; halve the chili pepper, remove the seeds, and cut into very fine cubes. Heat the butter in a pan and fry the cucumber cubes. Add the chili cubes, season with salt, and pepper. Add the tomato paste and mustard and mix well. Then add the cream (half sweet cream, half crème fraîche is also fine) and simmer until smooth. Season to taste with curry, salt, and pepper, and finally add the fresh marjoram (also fine: savory instead of marjoram). With potato cakes (made from mashed potatoes), this makes a delicious meatless meal; but it also goes well as a side dish to fried fish. Serve with a rosé from Provence or a light, well-chilled Spanish red wine (e.g., Navarra).
