Cucumbers – spinach vegetables

Ingredients for 3 servings:

  • 1 large cucumber(s)
  • 300 g leaf spinach (frozen)
  • ½ bunch of spring onions
  • 1 garlic clove(s)
  • 1 red chili pepper(s)
  • ½ tsp broth
  • 2 tbsp cream cheese with herbs, 15% fat (e.g. Bressot)

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Finely chop the spring onions and chili pepper, remove the seeds from the chili. Sauté both together, along with the crushed garlic clove. Peel the cucumber, remove the seeds, chop, and add. Finally, add the thawed spinach leaves. Add a splash of water and simmer for about 10 minutes, until the cucumbers are soft. Add the spices and broth, and finally the cream cheese.
