Ingredients for 1 servings:

  • 4 apples, sour
  • 500 g quark (cottage cheese)
  • 2 packs of puff pastry (rolls)
  • Raisins, to taste
  • Cinnamon
  • 2 eggs
  • 1 egg yolk
  • 1 lemon(s), zest
  • ½ pack of pudding powder, vanilla flavor
  • Sugar, to taste

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

In a bowl, combine the curd cheese with the 2 eggs, 1/2 packet of vanilla pudding powder, sugar, and lemon zest until creamy, then stir in the raisins. Peel and grate the apples – discard any juice if necessary; it shouldn’t be too wet. Mix the apples with the cinnamon and sugar. First, spread half of the curd cheese mixture over the rolled-out dough, then spread half of the apple mixture on top. Repeat with the second dough. Shape the dough into a log and place it on a baking sheet lined with baking paper. Brush the strudel with egg yolk and bake at 180°C (convection oven) for about 45 minutes. Tastes delicious both hot and cold.
