Ingredients for 4 servings:
- 30 g raisins
- 2 tbsp rum
- 4 eggs, separated
- 30 g sugar
- 1 pinch of salt
- 1 packet of vanilla sugar
- 375 ml milk
- 125 g flour
- 40 g butter
- powdered sugar

Soak the raisins in rum in a bowl for 30 minutes. Whisk the egg yolks, sugar, salt, and vanilla sugar in a bowl until light yellow and creamy. Gradually stir in the milk and flour, then add the raisins. Beat the egg whites until stiff peaks form, then carefully fold into the batter. Heat the butter in a pan, pour in the batter, and fry over low heat until the underside is lightly browned, turning frequently until everything is lightly browned. Tear it apart immediately. Serve on plates and sprinkle with powdered sugar. Serve with plum compote or compote as a side dish.
