Curd dumplings on a mirror of wild berries

Ingredients for 6 servings:

  • 500 g quark
  • 2 eggs
  • 100 g sugar
  • 100 g flour
  • 150 g breadcrumbs
  • 50 g potato starch
  • 250 g breadcrumbs
  • 1 tsp cinnamon
  • 50 g sugar
  • 500 g berries (wild berries, frozen)
  • 70 g sugar
  • 100 ml orange juice
  • 50 g potato starch

Working time approx. 20 minutes; Total time approx. 20 minutes

Knead the quark, eggs, sugar, flour, 150g breadcrumbs, and starch into a dough. Shape into small dumplings (I always use about 50g per dumpling) and add to boiling water. Bring to a boil and let stand for 15 minutes. During this time, drain the thawed wild berries. Bring the orange juice and sugar to a boil. Stir the potato starch into the drained juice of the wild berries. Pour the mixture into the boiling orange juice and bring back to a boil. Remove from the heat and stir in the wild berries. Toast the remaining breadcrumbs for the coating. Stir in the cinnamon and sugar while the crumbs are still warm. Divide the wild berries between plates, coat the quark dumplings in the coating, and place them on top of the wild berries.
