Curd – Nut – Schmarrn

Ingredients for 4 servings:

  • 6 eggs, separated
  • 120 g sugar
  • 200 g walnuts, ground
  • 3 tbsp flour
  • 250 g quark (cottage cheese)
  • ½ pack of baking powder
  • 1 tbsp vanilla sugar
  • Powdered sugar for dusting

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Beat the egg whites with 100g of sugar until stiff peaks form. Beat the egg yolks with 20g of sugar and the vanilla sugar until frothy, then stir in the curd. Mix the nuts, flour, and baking powder and fold in. Fold in the beaten egg whites. Spread the batter onto a baking sheet lined with baking paper and bake at 190°C (375°F) for about 15 minutes until golden brown. Cut into small pieces, serve, and sprinkle with powdered sugar. Serve with warm berries or apple compote.
