Curd pancakes with light quark filling, raisins and ice cream

Ingredients for 3 servings:

  • 100 g wheat flour
  • 250 ml milk
  • 120 g sugar
  • 4 eggs
  • 2 egg yolks
  • 500 g quark
  • 50 g raisins
  • 1 liter ice cream (vanilla)
  • e.g. cinnamon

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Mix flour, milk, 50g sugar, and 4 eggs into a batter and cook 6 thin pancakes in a pan. Mix the quark with the remaining sugar and 2 egg yolks (add a little cinnamon to the mixture if desired) and add the raisins. Spread the quark on the pancakes and place them rolled up in a baking dish. Bake at 200°C for about 15 minutes. Serve the curd pancakes lukewarm with vanilla ice cream! Tip: If you’ve never made thin pancakes before and are having trouble getting them thin enough, you can multiply the batter ingredients by 1.5 to ensure you actually have 6 pancakes after baking. Serves 3-6, depending on whether you’re serving this dish as a dessert (1 per person) or as a main course (2 per person). If you don’t like ice cream, you can also serve it with homemade vanilla sauce (see my recipe).
