Currant sparkling wine jelly

Ingredients for 1 servings:

  • 1.4 kg currants (for 800 ml juice)
  • 1 tbsp Bourbon vanilla sugar
  • 200 ml sparkling wine, semi-dry
  • 500 g gelling sugar 2:1

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 4 minutes; Total time approx. 1 hour 4 minutes

Makes 5 glasses of 200 ml each

Rinse the redcurrants with cold water, drain, and remove the stalks. Juice the fruit in a juicer and collect the juice in a saucepan. Mix with the vanilla sugar. Pour in the sparkling wine and stir in the gelling sugar. Bring to a boil, stirring constantly, and simmer for 4 minutes. Remove the pan from the heat, skim off the fruit mixture, and pour it into 5 200ml jars while still hot. Seal immediately. Tip: Instead of fresh redcurrants, you can also use redcurrant juice. If you don’t have a juicer, you can also puree the redcurrants and pass them through a sieve.
