Ingredients for 1 servings:

  • 3 cups vinegar
  • 3 cups sugar
  • 1 cup water
  • 1 tbsp salt
  • 1 tbsp curry
  • 5 cucumbers
  • 2 onions
  • 1 tbsp mustard seeds

Working time approx. 25 minutes; Rest period approx. 5 days; Total time approx. 5 days 25 minutes

from snake cucumbers

Combine vinegar, water, sugar, curry, and salt in a pot and bring to a boil. Peel and deseed the cucumbers, then cut into bite-sized wedges. Peel and quarter the onions. Place the cucumbers, onions, and mustard seeds in screw-top jars and pour the hot broth over them. Seal the jars tightly and let them steep for at least 5 days. The cucumbers make a great gift or small souvenir.
