Curry meat with coconut milk

Ingredients for 2 servings:

  • 450 g pork
  • 150 g onion(s)
  • 50 ml vegetable oil
  • 110 g curry paste, mild
  • 225 ml water
  • 1 can coconut milk
  • 2 tomatoes
  • Salt
  • cumin
  • Ginger

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Dice the onions and sauté in the hot oil until browned. Then add the diced meat and cook over low heat for about 5 minutes, stirring constantly. Season with salt. Then add the curry paste to the meat, mix, and pour in the water and coconut milk. Add the diced tomatoes and let the whole thing simmer over low heat for about 1-2 hours until the meat is nice and tender. If desired, season the sauce with a little salt and spices. If the sauce is still too runny at the end of the cooking time, thicken it with a little flour. You can serve it with basmati rice. Note: If you choose a different type of meat, you will of course have to adjust or shorten the cooking time accordingly!
