Dice the onion. Crack the eggs, season with salt, pepper, and curry powder (reserve a little for the onion), and whisk well. Sauté the diced onion in the butter until golden brown and dust with the remaining curry powder. Then add the scrambled eggs and finish cooking. Sprinkle with parsley before serving. Serve with crispy toasted, buttered bread or toast. Tips: You can also add a few sliced ​​mushrooms or diced tomatoes; the sky’s the limit.
