Curry turkey schnitzel in sauce

Ingredients for 2 servings:

  • 2 turkey schnitzels
  • 3 spring onions, alternatively 2 regular onions
  • salt and pepper
  • chili powder
  • curry powder
  • Instant vegetable broth
  • some oil
  • 500 ml water
  • shot of white wine
  • 2 tsp mustard, medium hot
  • Cornstarch or sauce thickener

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Pound the schnitzels if necessary and season well with salt, pepper, and chili powder. Brown the meat in oil in a large pan and remove from the pan as soon as it is browned to your liking. Sauté the spring onions in the drippings, add the mustard, and fry briefly. Deglaze everything with the white wine and allow to simmer or reduce slightly. Add the water and vegetable stock and bring to a boil on low heat. Once everything is gently simmering, return the meat to the pan and simmer briefly. Season the sauce with salt, pepper, and plenty of curry powder, then thicken with cornstarch or a sauce thickener until the desired consistency is reached. Serve with pasta, any variety of potatoes, or anything else your heart desires.
