Ingredients for 1 servings:

  • 250 g low-fat curd cheese
  • 3 eggs
  • ½ tsp salt
  • 100 g almonds, ground
  • 40 g flaxseed
  • 40 g sesame seeds
  • 40 g chia seeds
  • 30 g sunflower seeds
  • 30 g pumpkin seeds
  • 1 packet of baking powder
  • 75 g oat flakes, fine

Instructions

Working time approx. 15 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Combine the quark, eggs, and salt in a blender or food processor. Gradually add the remaining ingredients and mix thoroughly. If desired, add raisins. Let the dough stand for 5 minutes. In the meantime, preheat the oven to 180°C (top and bottom heat). Pour the mixture into a loaf pan (I always use a silicone one), sprinkle with seeds, if desired, and bake on the middle rack for 50 minutes. Remove the pan from the oven and let it cool completely.
