Ingredients for 4 servings:
- 500g spaghetti
- 500g mozzarella
- 500 g cherry tomatoes
- 10 tbsp balsamic vinegar, good quality (to taste)
- 10 tbsp extra virgin olive oil
- 1 bunch of basil
- Salt and pepper, freshly ground
Instructions
Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes
Cook the spaghetti according to the package instructions, drain and rinse, then toss thoroughly with the olive oil to prevent it from sticking together. Meanwhile, dice the mozzarella and halve the cherry tomatoes, quartering larger ones. Tear the basil from the stems, leaving the fine leaves whole and cutting the larger ones into strips. Add everything to the pasta, season with salt and pepper, and add balsamic vinegar (you can use more than the specified amount—the pasta will absorb quite a bit), toss thoroughly, and refrigerate.
