Eggnog nut cake

Ingredients for 1 servings:

  • 5 eggs
  • 200 g sugar (icing sugar is better)
  • 1 packet of vanilla sugar
  • ¼ liter of oil (I recommend rapeseed oil)
  • ¼ liter eggnog
  • 125 g flour
  • 125 g ground nuts (walnuts are juicier than hazelnuts)
  • 1 packet of baking powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Beat the eggs with sugar and vanilla sugar until frothy. Combine the oil, egg liqueur, flour, baking powder, and ground nuts. Fold the egg foam into the batter. Caution: The batter will be rather runny, so it won’t have the usual consistency! Pour the batter into a greased pan and place it on the middle rack of an oven preheated to 160°C. The cake needs about 1 hour (use a toothpick to check!).
