Ingredients for 6 servings:

  • 500 ml whey
  • 300 ml cream
  • 1 pinch(s) of sugar
  • 1 pinch of salt
  • Oil (dill oil), optional

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 35 minutes

Whey cream sauce, very good with fish

Pour the whey, half of the cream, and a pinch of sugar into a pan. Bring the mixture to a boil and simmer until most of the liquid has reduced and the lactose begins to caramelize. Reduce the heat, pour in the remaining cream, and whisk the sauce until fluffy. Season with a pinch of salt. The sauce should have a creamy, sweet, and slightly tart flavor. The whey reduction is delicious with fish such as salmon or trout. To round out the flavor and add a pop of color, you can also stir in a little dill oil.
