Daisy's Cauliflower Casserole

Ingredients for 4 servings:

  • 1 cauliflower
  • 1 tbsp flour
  • ¼ liter of milk
  • 40 g margarine
  • 1 tbsp Parmesan
  • 1 tsp salt
  • 2 cups of yogurt
  • 1 pinch of nutmeg
  • 1 egg yolk
  • 1 tbsp breadcrumbs
  • 1 tbsp butter, cut into small pieces
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the cauliflower, cut into florets, in salted water and then drain in a colander. Make a roux with the margarine and flour, deglaze with milk and yogurt, and simmer for a few minutes. Add the Parmesan cheese, salt, and a pinch of nutmeg, then stir in the egg yolk. Place the cauliflower florets in a greased baking dish and pour the yogurt sauce over them. Sprinkle with breadcrumbs and scatter the butter in small pieces over the casserole. Bake in a preheated oven at 200°C (top/bottom heat) for about 50 minutes.
