Ingredients for 1 servings:
- 350 g flour + a little more for dusting
- 6 tsp baking powder
- 1 tsp salt
- 90 g butter, melted
- 125 ml milk + a little more for brushing

Australian baking powder flatbread
Preheat oven to 210°C. Grease a baking tray. Sift the flour, baking powder, and salt into a bowl and make a well in the center. Mix together the butter, milk, and 125 ml water and pour into the well. Mix in loosely with a knife. Form a ball and knead briefly on a floured surface. Place on the baking tray and flatten into a flatbread about 20 cm in diameter. Use a sharp, pointed knife to cut the surface into eight segments by making about 1 cm deep cuts. Brush with milk, dust with a little flour, and bake for about 10 minutes. Reduce the temperature to 180°C and bake for a further 15 minutes until golden brown. Serve while still warm with butter and honey or syrup. You can also make 4 small flatbreads from the dough. Cut these crosswise and shorten the baking time slightly.
