Ingredients for 1 servings:

  • 1 cucumber(s), approx. 450 g
  • 1 tsp salt
  • 1 tbsp, heaped sugar
  • 1 lemon(s), juice

Instructions

Wash and slice the cucumber, then place it in a suitable, tightly sealed plastic container. Pour salt, sugar, and lemon juice on top. Close the container and turn it over occasionally so that the resulting juice penetrates all the cucumber slices. After about an hour, season with salt, sugar, and more lemon juice. Drain the cucumber slices. Tips: The liquid can be used for other purposes, such as in potato or other salads. It’s also great for drinking. Once you’ve used up all the fresh lemon juice, you can also add lemon juice concentrate, for example.
