Ingredients for 6 servings:
- 2 kg banana(s), sliced
- 1 kg onion(s), diced
- 500 g date(s), dried, diced
- 250 g ginger, pickled, diced
- 1 pinch of salt
- 1 pinch(s) curry powder
- 500 g beet syrup
- 600 ml vinegar (malt vinegar)
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook the bananas, onions, dates, and vinegar until the onions are soft. Stir vigorously with a wooden spoon until a porridge forms. Stir in the curry powder, ginger, salt, and beetroot syrup. Simmer until the mixture turns a deep brown color, about 10 minutes. Makes six 500g jars. Great with cold meats, a cheese platter, or on sandwiches.
