Ingredients for 1 servings:
- 500 g pumpkin flesh
- 500 g carrot(s)
- 1 vanilla pod(s)
- 1 tsp speculatius spice
- 3 oranges
- 1 lemon(s)
- 1 point citric acid
- 1 point Gelfix, Extra 2:1
- 500 g sugar

Sauté grated pumpkin flesh (mine came from the freezer) and finely chopped carrots in a little water for 30-40 minutes until soft, then transfer to a blender and puree. Combine 500g of sugar and the gel-fix, then stir into the puree. Add the squeezed lemon and orange juice and the whole, split vanilla pod. Cook in a tall saucepan according to the instructions for at least three minutes. Add the citric acid and mix well. Remove the vanilla pod from the fruit puree. Immediately pour the hot mixture into prepared jars with twist-off lids, screw on tightly, and let cool upright on the lids. I was surprised myself at how delicious this somewhat unusual combination tastes.
