Ingredients for 1 servings:
- 100 g dates, cut into small pieces, weighed without stones
- 150 ml water
- 60 g margarine or butter
- 80 g brown sugar
- ½ packet of vanilla sugar
- ½ tsp cinnamon
- 2 eggs
- 2 tbsp milk
- 1 tbsp cocoa powder
- 110 g flour
- 1 tsp baking powder
- ½ tsp baking soda
- possibly powdered sugar
- possibly chocolate shavings

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes
simple sponge cake with super flavor for an 18 cm springform pan
This amount is sufficient for an 18cm springform pan. Place the chopped dates in a small bowl, bring the water to a boil, and pour over the dates. Cover and let stand until lukewarm. Then, cream the margarine or butter with the sugar, vanilla sugar, and cinnamon until soft. Add the eggs one at a time and beat until frothy. Stir in the milk. Mix in the flour, baking powder, baking soda, and cocoa powder. Add the water/date mixture and mix well. Pour into the pan and bake in the oven at 165°C (convection oven) for about 50 minutes. Dust with powdered sugar or sprinkle with chocolate shavings while the cake is still hot. For a 26cm springform pan, double the amount and add about 10 minutes to the baking time. (Use a toothpick to test the baking time.)
