Délice Pear – Chocolate

Ingredients for 6 servings:

  • 3 bulb(s)
  • ½ lemon(s), juice
  • 100 g chocolate (70% cocoa)
  • 100 g sugar
  • 40 g butter
  • 2 eggs
  • 2 tbsp jam (orange jam)
  • 1 pinch of salt
  • 200 g flour
  • 125 g butter
  • 50 g cocoa powder
  • 50 g powdered sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Mix flour, butter, cocoa, powdered sugar, vanilla sugar, 1 egg, and salt into a dough. Wrap in foil and chill for 1 hour. Preheat oven to 180°C. Roll out the dough and place it in a dish. Prick the base with a fork. Bake for 10 minutes. Slice the peeled pears and drizzle with lemon juice. Spread the orange marmalade over the cake base and arrange the pear slices on top. Melt the chocolate and remove from the heat. Add the butter. Beat the egg yolks with the sugar and slowly fold into the chocolate. Beat the egg whites with a pinch of salt until stiff and fold into the chocolate cream. Pour this mousse over the pears and spread evenly. Bake for a further 35 minutes. Serve lukewarm.
