Delicious bean puree

Ingredients for 2 servings:

  • 1 clove(s) garlic
  • 1 small can of beans (425 g), white
  • 4 sprigs of thyme
  • 4 tbsp olive oil
  • 2 tbsp yogurt, Turkish or cream yogurt (10%)
  • 1 tbsp lemon juice
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and finely chop the garlic clove. Drain 1 can of white beans (425g) and rinse with cold water. Pick the leaves from 4 sprigs of thyme. Heat 2 tablespoons of olive oil in a saucepan and sauté the garlic for 1 minute. Add the beans and half of the thyme and sauté for 5 minutes. Place the beans in a tall container and roughly puree using a food processor. Mix in the remaining thyme, 2 tablespoons of olive oil, and 2 tablespoons of Turkish yogurt (or cream yogurt, 10%). Season the bean purée with salt, pepper, and 1-2 tablespoons of lemon juice. Tip: If you like, you can add a little more nutmeg or season with Tabasco to taste.
