Delicious vanilla sauce with caramel notes

Ingredients for 4 servings:

  • 200 ml milk
  • 200 ml cream
  • 1 vanilla pod(s)
  • 3 tbsp, levelled sugar
  • 1 egg(s)
  • 1 egg yolk
  • 1 pinch of salt
  • 1 tsp, heaped cornstarch

Working time approx. 10 minutes; Total time approx. 10 minutes

Combine 150 ml of milk and the cream in a saucepan. Scrape out the vanilla pod. Heat the vanilla seeds and pod in the milk. If you’re making your own vanilla sugar, you can also boil the dried vanilla pods from the sugar in the milk. This will release their final vanilla flavor. Once the milk has boiled, remove it from the heat and let it steep for a while while you continue the preparation. Combine the egg and egg yolk with the remaining cold milk in a bowl and whisk. Stir in the cornstarch and salt. Pour the hot vanilla milk through a sieve into a container. Place the sugar in a new saucepan and melt over high heat, stirring constantly, until it turns light brown—not too black. When the desired brown color is reached, immediately add the vanilla milk and continue stirring until the caramelized sugar is dissolved. Then stir in the milk and egg mixture and bring the whole thing to a boil briefly while stirring. Delicious hot or cold.
