Dessert: Ricotta and Passion Fruit Dish

- 250 g Ricotta
- 200 ml Whipped cream
- 60 g Sugar
- 2 sheet Gelatin
- 200 ml Passion fruit juice
- 2 El Cointreau
- 100 ml White wine
- 1 just Vanilla flavor
- Let the sugar caramelize in a saucepan, deglaze the juice and the wine and reduce to 1/3. Soak the gelatine in cold water.
- Remove the saucepan from the heat, let it cool down a little, add the gelatine and vanilla, then stir in the ricotta. Add the Cointreau and stir well.
- When everything starts to gel a little, then fold in the whipped cream and chill.
