Ingredients for 1 servings:

  • 240 g flour
  • 85 g cocoa powder
  • ½ pack of baking powder
  • 1 pinch of salt
  • 250 g butter, soft
  • 180 g sugar, white or brown
  • 2 large eggs
  • 1 vanilla pod(s), including the pulp or vanilla extract
  • 160 ml milk, room temperature
  • 2 large egg whites
  • 60 g sugar
  • 30 g syrup (light corn syrup or caramel syrup)
  • 2 tbsp water
  • 1 tsp vanilla extract
  • 1 pinch of salt
  • Cocoa powder or
  • Chocolate shavings

American chocolate cake that’s devilishly good…

For the dough, cream the butter until light and fluffy, add the sugar and cream until creamy, then add the vanilla, eggs and salt and mix everything until smooth. Mix the flour, cocoa and baking powder and sift over the dough. Stir slowly and mix in the milk until you have a dough that is difficult to pull apart. Spread into a buttered springform pan and bake at 180°C for 45-60 minutes. Do the skewer test and let cool. The cake tastes even better if it has been able to sit for 1-2 days and if the center is still quite soft, i.e. not completely baked through. For the icing, beat the ingredients together in a metal bowl over a pan of simmering water until thick and creamy; this should take about 5-10 minutes. Spread over the cake and dust with a little cocoa or sprinkle with chocolate shavings. Only use fresh egg whites and only add the icing before serving. The cake is also perfect for themed cakes; alternatively, you can simply cover it with chocolate and it also goes great with a filling like cream cheese.
