Ingredients for 4 servings:

  • 1 pack of cheese (Romadur)
  • 500 g potatoes, cooked from the previous day
  • 2 tbsp flour
  • 2 egg yolks
  • some tarragon, fresh or dried
  • 1 tbsp parsley, chopped
  • 1 tbsp breadcrumbs
  • 1 tbsp mountain cheese, grated
  • Clarified butter
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Romadur cakes

Peel and grate the potatoes, add the flour, egg yolk, parsley, and tarragon, and season with salt and pepper. Fold in the diced Romadur cheese. Form the dough into small dumplings. Mix the grated cheese with the breadcrumbs and roll the dumplings in the mixture. Flatten slightly and fry in a pan in hot clarified butter until golden brown. Serve lukewarm with leaf salad.
