Fresh peaches with marzipan sauce

Ingredients for 4 servings:

  • 4 peaches, fresh ripe
  • 1 orange(s), untreated
  • 100 g marzipan paste
  • 50 g powdered sugar
  • 100 g crème fraîche
  • Mint, fresh for garnishing

Briefly dip the peaches in boiling water, then peel off the skin with a small knife. Halve the peaches and remove the stones. Make several cuts in the halves so that they can be spread out into a fan. Wash the orange in hot water, then dry it. Finely grate the zest and squeeze out the juice. Insert the blade into the food processor. Knead the marzipan until very soft, then add it to the bowl along with the powdered sugar, orange zest, orange juice, and 1 tablespoon of crème fraîche and beat until creamy (about 2 minutes on the highest speed). Add the remaining crème fraîche and beat briefly until fluffy. Divide the marzipan sauce between four flat plates, arrange the peaches on top, and serve garnished with mint.
