Ingredients for 1 servings:
- 1 orange(s), juice and zest
- 1 tbsp apricot jam
- 400 g crème fraîche with herbs
- 6 tbsp Dijon mustard, coarse-grained
- 1 bunch tarragon, finely chopped
- some salt
- some orange pepper
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes
goes wonderfully with game, e.g. venison medallions
Briefly heat the orange juice and zest in a pan, add the marmalade, crème fraîche, mustard, and chopped tarragon, and simmer for about 15 minutes over medium heat. Season with salt and orange pepper. Tip: Use more or less mustard or tarragon to taste.
