Dip – Garlic – Sauce

Ingredients for 4 servings:

  • 200 g sour cream or creme fraiche
  • 4 garlic cloves
  • 2 tsp olive oil
  • 50 g mayonnaise
  • ½ tsp tomato paste or ketchup
  • Pepper, black, salt, paprika
  • some lemon juice, for fish dishes
  • some parsley, for decoration

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Peel the garlic cloves and finely chop or press them. Pour the oil into a bowl and mix in the garlic thoroughly, then add the sour cream and mayonnaise and mix well. Then fold in the tomato paste, season to taste, and mix well again. The whole thing creates a delicate garlicky tomato sauce that’s spicy but not overly salty, and goes very well with fish and meat dishes. For fish or crab dishes, I add a squeeze of lemon juice. When serving, garnish with a small sprig of parsley. Variations, for example, for potato dips can be created with herbs like parsley and/or chives, although I would use much less garlic.
