Don Diego's Teriyaki Chicken & Pineapple Burger

Ingredients for 2 servings:

  • 2 burger buns with sesame
  • 2 half chicken breast fillets, approx. 150 g each
  • Teriyaki sauce for marinating
  • 2 slice(s) pineapple (preferably fresh)
  • 1 large tomato(s), sliced
  • 1 onion(s), red, cut into rings
  • 2 lettuce leaves
  • mayonnaise
  • Salt

Hamburger with marinated chicken breast and grilled pineapple

“Chicken Sandwich” has nothing to do with “chicken sandwich,” so it’s not a new delivery service for American sandwiches, as some people think. The following recipe describes what it can be: Flatten the two chicken breast halves and place them in teriyaki sauce. Marinate in the refrigerator for at least two hours, if possible overnight. Slice tomatoes, cut onion into rings, set aside two lettuce leaves, and cut two not-too-thick slices from a fresh pineapple (or two canned slices, if you prefer). Fry/grill the chicken breasts in a pan (or on the grill) at medium temperatures. Due to the sugar content of the teriyaki sauce, the fillet browns relatively quickly. A high cooking temperature would quickly cast doubt on whether it can actually be true that the formation of coal took millions of years, and would distract from the two pineapple slices, which also urgently need to be grilled or pan-fried. Towards the end of the cooking process, briefly place the two hamburger buns, with the insides facing down, on the grill and toast them. Now the assembly can begin: Layer mayonnaise on the bottom of the bun, then the lettuce leaf, a slice of tomato, and the grilled/fried chicken breast. Once you’ve balanced the onion rings on the chicken breast and the pineapple slice on the onion rings, add the cap, the second half of the bun. And your “chicken sandwich” is complete. I omitted the popular slice of cheddar cheese because it would have made the recipe name too long: Don Diego’s Grilled Teriyaki Chicken and Pineapple & Cheese Burger. However, if you can remember that, you can also add a slice of cheese to the pineapple. I recommend serving it with a portion of French fries and/or Don Diego’s Nat King Cole Slaw.
