Ingredients for 4 servings:

  • 500 g flour
  • 2 eggs
  • 1 tsp, leveled salt
  • 1 pinch of nutmeg
  • ¼ liter of milk

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Sift the flour into a large bowl, then crack in the eggs (I crack each one into a mug first to check they’re still good). Add the salt and nutmeg and a good splash of milk. Then mix everything together with a sturdy wooden spoon. Gradually add more milk until you have a sticky, bubbling batter. Meanwhile, bring 2 liters of stock or salted water to a boil and add the batter, a little at a time, using a large tablespoon (always dip it in the hot water first, otherwise the batter won’t come apart). Then set the heat to medium. The irregularly shaped dumplings are cooked when they float to the top. They’re delicious as a side dish with fried onions, bacon, or sauce. If you have any leftovers, they’re even better fried in the evening.
