Dutch apple pancakes

Ingredients for 4 servings:

  • 300 g flour
  • 2 eggs
  • Milk, as needed
  • 1 pinch of salt
  • 3 apples, slightly sour
  • powdered sugar
  • 6 cl Calvados
  • Oil or clarified butter for frying

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Whisk together the flour, eggs, milk, and salt to form a runny pancake batter. Peel and core the apples, and cut into 3-4 cm thick slices. Briefly fry the apples in the fat on both sides, pour the batter over them, and brown until golden brown. Flip them over with a plate and brown the other side as well (if you can, you can of course use the “stick to the ceiling” method ;-)). Pour the Calvados over the apples and flambé them. Dust generously with powdered sugar.
